STRAWBERRY BLUE CHEESE WATERMELON SALAD

This salad is so simple yet some good. It works on many levels: it has a sweet and savory vibe, the brightness from the lime juice bolsters the sweetness of the watermelon and strawberries, the strawberries and balsamic glaze are as tomatoes and basil – they simply work together and the basil adds herbaceous slightly anise notes and the blue cheese and pepitas add the saltiness to the sweet. Plus, it takes no time to assemble, looks beautiful adding vibrance to a table setting. An absolute perfect summery salad. Have the strawberries hulled and watermelon chopped ahead of time and assemble right before serving. It is also good the next day.
