Strawberry Blue Cheese Watermelon Salad is so simple yet so good. It works on many levels: it has a sweet and savory vibe, the brightness from the lime juice bolsters the sweetness of the watermelon and strawberries, the strawberries and balsamic glaze are as tomatoes and basil – they simply work together and the basil adds herbaceous, slightly anise notes and the blue cheese and pepitas add the saltiness to the sweet. Plus, it takes no time to assemble, looks beautiful adding vibrancy to a table setting. An absolute perfect summery salad. Have the strawberries hulled and watermelon chopped ahead of time and assemble right before serving. It is also good the next day.

Because there’s so few ingredients, make sure to use the freshest of ingredients. Strawberries are in season here in the US and farmer’s markets are the best place to buy them unless you have a u-pick place nearby. Lucky you if you do. STRAWBERRY BLUE CHEESE WATERMELON SALAD
Ingredients
- 4 cups cubed watermelon
- 1 lb small to medium strawberries, hulled and halved
- 3 tablespoons lime juice
- 3 tablespoons finely shredded basil, plus extra leaves for garnish
- 2 tablespoons balsamic glaze
- 4 oz creamy blue cheese, broken up
- 1/3 cup salted pepitas, toasted
Instructions
- Place watermelon and strawberries in a large bowl. Add juice and basil; toss to combine.
- Arrange the salad on a platter. Drizzle with balsamic glaze. Scatter with cheese and pepitas. Garnish with extra basil leaves. Serves 4 to 6.
