One Pan Garlic Butter Shrimp & Broccoli

Ingredients

  • 2 red bell peppers, quartered
  • 12 to 16 oz broccoli, trimmed & cut into florets
  • 1 lemon sliced
  • 1 tablespoon olive oil
  • generous pinch of salt & freshly ground pepper
  • 1/4 cup melted butter
  • 4 garlic cloves, minced
  • 1 teaspoon crushed red peppers
  • 16 extra large shrimp, peeled & deveined leaving tails intact (about 16 shrimp)
  • 1/4 cup chopped fresh Italian parsley (or 2 teaspoons dried)

Instructions

  • Line a baking sheet with parchment paper. Heat oven to 400F.
  • Toss pepper, broccoli, lemon slices, oil, salt & pepper on baking sheet. Cook for 10 minutes.
  • Combine melted butter, garlic & crushed red pepper in a small bowl. Add shrimp & butter mixture to the vegetables & toss to coat everything in butter. Cook for 15 minutes or until shrimp are just cooked & vegetables are tender-crisp.
