A sandwich has to be one of the easiest & most widely enjoyed lunches. Almost anything can be added to sandwich, the trick is to keep it fairly simple: good bread, fresh ingredients, a condiment & a spread of some sort. This Veggie + Hummus Baguette is one of my favorite sandwiches. If you’ve never tried this combination of hummus, cucumber, white onion & pickled beets you must.
Jump to RecipeHere’s a recipe for Smoky Black Bean Hummus (which technically isn’t hummus because it doesn’t contain chickpeas but delicious nonetheless so let’s not split hairs). Use your homemade hummus or store-bought. There’s lots of good brands sold in most grocery stores. I did mention for a perfect sandwich there had to be both a spread & a condiment. Hummus does double duty as both. So does avocado. People may say peanut butter does too but I use both butter & peanut butter on a sandwich. But I digress.
There’s only four filling ingredients in this sandwich & I consider beets to be key. If you’ve never had a sandwich with beets, I urge you to try one. Try this one first of course. I’ve spent almost 20 years living in North America & I’ve never once seen beets on a sandwich. Anywhere. Canada (my first home on this continent) & the US are both guilty of not including beets in sandwich fillings. I know people eat beets here; flip through a cookbook & there’ll be a beet salad recipe inside. So I’m assuming people are eating them. Just not on a sandwich. It’s a travesty. When you’re at the store next, buy some. Aunt Nellie’s seems to be a brand sold everywhere. I like they’re in a jar making for easy storage once opened, no rummaging in the cupboard for a container.
In summer when tomatoes are at their peak, I like to add those too. Another favorite sandwich of mine is tomato, cucumber, shaved white onion with a smear of mayo, salt & pepper. Anyway, no sooner had I shot this baguette this morning than I had the kettle on, boiling water to make a pot of tea. A good sandwich & a cup of tea & I’m in lunch heaven. Toodles, Lovoni xo
VEGGIE + HUMMUS BAGUETTE
Ingredients
- 12- inch baguette, halved
- 4 tablespoons hummus, dived
- 8 to 10 slices English cucumber
- shaved slices of white onion
- 8 to 10 slices pickled beets*, drained on paper towel
- flaked sea salt & freshly ground pepper
- short bamboo skewers, optional
Instructions
- Spread hummus on the cut sides of both baguette halves.
- Layer cucumber, onion & beet inside both baguettes; secure with a skewer. Makes 2.
