SPICED CHICKEN GYROS
Gyros are traditionally cooked on a vertical spit with pork or chicken. Not having a vertical spit, I opted for a less traditional method of cooking the chicken – horizontally on a barbie. The results of a spice rub marinate, a light bathing in olive oil and a quick, hot blast on the grill produced lots of flavor reminiscent of the vertical cousin. Marinate the chicken in the rub overnight if time permits.

SPICED CHICKEN MARINADE
- 2 teaspoons each ground cumin, ground coriander, ground smoked paprika, garlic powder
- 1 teaspoon cayenne pepper
- 1 teaspoon sea salt & freshly ground black pepper
- 4 skinless, boneless chicken thighs
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
GARLICKY YOGURT SAUCE
- 1/2 cup plain Greek yogurt
- 2 teaspoons lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon ground cumin
- Pinch sea salt and freshly ground pepper
TO SERVE
- 4 pita bread or other flat bread, warmed
- 2 cups shredded iceberg lettuce or romaine
- 2 ripe tomatoes, halved and sliced
- 1/2 small red onion, thinly sliced
- 1/4 cup roughly chopped flat leaf parsley
- Hot sauce, optional
- Lemon slices, to serve
- Parchment paper and string to wrap gyros, optional
To make the chicken:
Combine all the ingredients except the lemon juice and oil in a medium bowl. Mix to ensure the chicken is evenly coated in the spices. Cover and chill in the fridge for 4 hours or overnight if time permits.
Remove chicken from the fridge 30 minutes before cooking. Add the oil and stir to coat the chicken Cook on a medium-high greased grill (bbq) for 15 minutes, turning halfway through. Remove to a cutting board. Drizzle with lemon juice; cover to keep warm. Cut into 1/4-inch thick slices just before serving.
To serve:
Spread some yogurt sauce on each pita; top with lettuce, tomato, chicken, red onion, parsley and more yogurt sauce and hot sauce if using. Roll up to enclose filling. Tie with string. Serve with hot sauce, lemon slices. And any leftover yogurt sauce.
