PECAN, MAPLE AND CHERRY GRANOLA

Nuts and seeds are not only good for gut health because of their fiber content but they’re also rich in healthy fats, good for the brain and the gut. Not to mention heart healthy. Although nuts and seeds are higher in calories because of their high fat content, you really don’t need much of them to reap the health benefits. Making your own granola is fast and easy and infinitely better than store-bought stuff.

Ingredients

  • 1 stick butter or avocado oil
  • 1/3 cup pure maple syrup or sugar-free, plus extra for drizzling
  • 2 cups rolled oats
  • 1 cup coarsely chopped pecans
  • 1 cup sliced almonds
  • 1/2 cup pepitas
  • 1/2 cup sunflower seed kernels
  • 1/4 cup golden flax seeds, lightly crushed to break the outer shell
  • 1 teaspoon sea salt
  • 1 cup dried cherries
  • Yogurt, to serve
  • Berries, to serve

Instructions

  • Preheat the oven to 350°F (180°C). Line a large baking sheet with parchment paper.
  • Melt butter and maple syrup together in a large bowl in the microwave for 1 minute on high or until butter is melted. Give the mixture a good stir.
  • Add oats, pecans, almonds, pepitas, sunflower seed kernels, flax and salt and mix until well combined. Spread evenly onto the baking sheet. Bake for 20 minutes. Stir and bake for about 15 minutes until golden brown. Let stand on the baking sheet until cool.
  • Add the cherries to the granola and mix well to combine. Transfer into airtight jars. Keeps for about 6 weeks. Makes about 6 cups, enough for about 18 servings – that’s about 1/3 cup per serving.
  • To serve: Spoon some yogurt into a bowl and smooth the top. Drizzle with a little maple syrup. Add berries and granola. Or, spoon the yogurt into a bowl, place the berries into a small jar or bowl and the granola into its own jar or bowl and serve alongside the bowl of yogurt. Yogurt and berries are not included in the nutritional information.
