Air Fry Loaded Baked Potatoes are my current potato favorite. It’s been said I’m a bit of an air fryer advocate and why not? There’s much to love about an air fryer: speedy cooking, no hot oven on in the middle of summer heating up the kitchen, very little washing up and the drawers to my Ninja Air-Fryer *go into the dishwasher. This post isn’t about air fryers it’s about the potatoes cooked in the air fryer. For over a year I’ve been wanting to share this recipe but I thought it too simple. For those of you who, like me, LOVE potatoes and you’ve not cooked a baked potato in the air fryer simply because you’d not considered it, then you’re going to like this recipe. Air Fry Loaded Baked Potatoes, perhaps not for every night, unless you banish the butter and sour cream oh and the bacon, but if you enjoy a baked potato with a juicy steak on a Friday night like we do in my house (or even served with some good baked beans or roasted veg if you’re a vegetarian), then you need to make this recipe. And maybe a no mayo tater salad if you’re feeling the potato vibe. You can cook these little taters in the air fryer too.

I take no credit for this recipe for it was my husband who first made the potatoes this way and continues to do so. He tosses the halved potatoes first in a little of the bacon fat left from cooking the bacon in the air fryer also. Use bacon fat or use olive oil, your choice. Then the potato halves are seasoned and baked. The toppings are key, nothing too crazy: good, salted butter, sour cream (or thick, plain yogurt – if you have homemade, that’s even better), lots of crispy, crumbled bacon, snipped fresh chives and for a final flourish if you feel so inclined, crispy onions – delicious but not compulsory. I will either make them myself or buy them (infinitely easier) –
