All you need is a quantity of homemade toffee iced coffee, some popsicle molds, popsicles sticks, a freezer & you’re good to with making coffee popsicles – a delicious treat for hot summer days.
Serve them up plain or give them a drizzle with some melted chocolate & melted butterscotch chips. Or make your own butterscotch sauce by heating brown sugar & cream together then chilling until cold.
You could even add a little coffee flavored liqueur. Just saying. Had I thought of it before posting this, I certainly would of added a good splash of booze.
These are the popsicle molds I use, I’ve found them to be better than any I’ve used in the past. They’re a little more expensive than the plastic molds but these work better at releasing the popsicles. Just a sec or two under some warm water & out they come – intact. I bought these ones on Amazon.
To make the coffee popsicles, doesn’t require a recipe but I use my Homemade Toffee Iced Coffee recipe, poured into molds & frozen. Then I run the molds under the water for 10 to 20 seconds for the popsicles to release & once they do I drizzle or dip them with or in toffee & chocolate. Voila!
